Vegetable Stew is a recipe famous in Kerala. It is quick, healthy and easy recipe containing lots of vegetables in coconut curry.
You can make this recipe in pressure cooker as well instead of kadhai to reduce cooking time.
Let's see a quick recipe to make this quick and healthy dish!
Onion: 2 large
Ginger: small piece
Potato: 2 medium
Carrot: 1 large
Greenpeas: 1/4 cup
Tomato: 1 large
Curry leaves: 8-10 leaves
Shallot: 5 pieces
Raisins: 1 tbsp
Pepper powder: 3/4 tsp
Garam Masala Powder: 1 tsp
Thick coconut milk: 3/4 cup
Thin coconut milk: 1.5 cup
Salt: as per taste
In a kadhai, heat 1 tbsp coconut oil and add the onions. Cook it for 1 min.
Now add ginger & green chillies, saute the mix till the onions turns translucent.
Add all the vegetables except tomato, saute them for few mins.
Add salt, pepper powder & garam masala, mix the spices well with the veggies.
Now add tomato and thin coconut milk. Close the pan with a lid and cook for 20 mins at low flame.
Once the 20 mins are over, turn flame to high and add thick coconut milk. Cook it for 30 secs and off the flame.
In different pan take 1 tsp coconut oil, add shallots, raisins and curry leaves. Temper the curry.
Serve hot with Chapati/ rice or appam idiyappam.
