Zurbian is a popular Arabic biryani popular in Yemen. Zurbian Rice is usually prepared during Eid for an important guest. The different variations of this variety of rice are lamb and chicken.
Zurbian is an easy dish and can be scaled up according to the number of people. The recipe shared here is for 6 people.

Ingredients Required:
For Zurbian masala
· Chicken – 1 kg
· Potato – 3 medium-sized
· Onion – 5 big sized
· Green Chilly – 2
· Ginger – 1-inch piece
· Garlic – 15 cloves
· Curd – ½ cup
· Oil – 5 tbsp
· Chilly powder – 1 tbsp
· Coriander – 1 tbsp
· Pepper powder – 1.5 tbsp
· Turmeric – ¼ tsp
· Garam Masala Powder – 1 tsp
· Salt – 2 tsp
For Rice
· Rice – 3 cups
· Oil – 2 tbsp
· Bay leaf – 1
· Cinnamon stick – 1
· Cardamom – 8
· Cloves – 8
· Fennel – ½ tsp
· Fresh lime – 1
· Mosambi peels – 4 pieces
· Salt as needed
· Water as needed
For layering
· Coriander leaves
· Mint leaves
· Fried onion
· Garam Masala Powder – ½ tsp
· Juice of 1 mosambi
· Saffron milk – 6 tbsp
Instructions:
1. Slice the onion and fry it golden brown.
2. Ground half of fried onion, garlic, green chili, ginger, curd and set aside
3. In a pot add 5 tablespoons of oil and add chicken.
4. Saute for 5 minutes in high flame.
5. Add 2 teaspoons salt
6. Now add the masala powders and sort it in medium flame
7. Add 3 potatoes
8. Now add the grounded onion paste
9. Saute and add after cup water
10. Close with a lid and cook for 15 minutes in medium flame
11. In another pot add water with 2 tablespoons oil, whole spices, mosambi peel add lemon.
12. When it starts to boil add 3 cups of Golden Sella rice.
13. While boiling close the lid and cook for 10 minutes in medium flame
14. After 10 minutes switch off the flame and remove the mosambi pills and lemon
15. Now drain the rice
16. Add the rice to the cooked chicken masala in 2 batches
17. Layer with coriander leaves me leaf garam masala powder fried onion mosambi juice and saffron milk
18. Dum the pot for 25 minutes in low flame
19. After 25 minutes open and serve hot
